Why does Trump say, "I don't even know the guy"?

There is audio evidence that says the exact opposite.

And why would he appoint someone he doesn't know to be his acting Attorney General?

What's his game?

First of all, he is scared. He is very afraid that Mueller is ready to drop indictments on some of his closest allies and family.

He wants to be very careful to let Mueller know that he is not obstructing justice with this appointment of Matthew Whitaker. It is all above board. There is no intent to obstruct. But, will Mueller buy it?

Trump is attempting to pull a quick one. He wants to slow down and block Mueller's path to any further investigation of the Russia issue.

He insinuates that Whitaker is only there temporarily. But, while he is there, he will have authority over Rosenstein and Mueller and the investigation.

If Mueller does not drop any indictments today, he may have temporarily succeeded?

under the bus. Since he is stupid and listens to the wrong people, he is always surprised when he gets pushback on his oh-so-clever maneuvers.

Even Fux and some Rs are saying this is an illegal act.

There is an article today (I think at Maddow's blog?) that said Whittaker wasn't vetted and they (White House officials) didn't know about all his TV comments and shady background. So my guess is they are trying to put some distance from him (while still trying to leave him there at DOJ).

he won't and he might have just made things worse for himself. And all sorts of dodgy stuff is now coming out about Whitaker. So now that it looks like Whitaker's appointment will be challenged in various ways, he barely knows the guy. If Whitaker does actually get removed from the position, it will be all someone else's fault that he got the job in the first place.

tRump didn't anticipate the blowback so now he has to "DK" him to save face.

He doesn't care who or what Whitaker is. He needs him to do just one task - get Mueller out of his over-sprayed orange hair - and then he doesn't give a damn what happens to MK. The fact that Whitaker doesn't realize this and is still willing to take the job shows how dumb and unqualified he is.

Trumpspeak isn't contingent on reality, it's whatever feels right in the moment. "I don't even know the guy" I just named to be acting attorney general means I didn't think anyone would check up on him, and I sure didn't think they'd turn up anything bad. Look for this excuse to be used soon in regard to Donald Jr. "Nobody knows" what going on with this or that means "I don't know" what's going on. "Thousands of people have been waiting for hours" outside some rally venue means the four-day old dog turd outside on the grass is drawing more flies than Trump's rally will draw people.

What fun he’s having! He appoints a criminal with no experience whose main purpose is to stop Mueller on Trump’s behalf, then lies about knowing him just to get his jollies off watching everyone talk about it.

In his mind this is his game, and in his game he always wins no matter what he says or does.

Either Mueller doesn't have anything on Trump and family or Mueller has Trump cold and the process for getting him locked in. I'm betting on the latter.
