Navajo Flatbread Recipe: For these trying times

Found on fb


Navajo Flatbread:
Makes 6

2 cups flour
1 - 1 1/4cup of lukewarm water
1 table spoon baking soda
1 tsp kosher salt
1 table spoon oil/butter/shortening

Mix dry ingredients together and add most water, mix and add water until it has the consistency of tacky pizza dough.
Knead for a few minutes.
Let rest in greased bowl for 30- 60 minutes.
Divide into 6 pieces and roll out on floured surface thin. (Tortilla thickness)
Hear griddle to 350F.
Cook until golden brown spots and flip, cooking until done.
They can be made ahead and kept under a flour towel or frozen for later use.

I'm very familiar with actual fry bread, having lived just outside a reservation and socialized with with the tribal members (Ojibwe) for many years. I've watched it made - and eaten plenty - and it's cooked in melted fat/oil, not on a griddle.

But I assume there are regional differences for what is called "fry bread".

I've also watched it made dozens of times and have made it myself from a recipe I was given at a pow wow. As you say, deep fried in fat/oil and hand stretched vs rolled out. I used to make it every once in awhile but had to stop because, well--oink!! I could eat a whole batch (10-12) myself in a day. My favorite way is sprinkled with powdered sugar. How could it be bad for you, fried dough covered in sugar!!

The OP calls it Navajo flatbread, so I think it must be more of a tortilla type bread. Sounds good though for sure!

BTW, if you’re ever in Navajo territory East of Flagstaff stop in to the Twin Arrow Casino’s grill for a Navajo burger on fry bread featuring reservation grown Angus (meatless option available) and Hatch green chilies. Awesome!

Find it at a Mexican market near you.

Actually all work. But lard is no worse for you than any of the above and taste so much better.

As a southerner I know unless made with lard, biscuit is not biscuit.

When was the last time you craved a shortening sandwich? But when in Germany I had lots of bread smeared with spiced and herbed lard. As good as butter. Ok not quite as good. But was good none the less.

You need to use Blue Bird flour.

Or you can use 50/50 mix of blue cornmeal with the flour to go Hopi style.

If you're ever around the Grand Canyon and Flagstaff, go to Cameron, out the East entrance, and stop at the Historic Trading Post for a Navajo Taco. Be hungry.
