Just got off a call with the North Carolina Democratic Party on volunteer needs

They will have (and are losing for) poll observers starting October 15. However they also need volunteers to staff a voter information and voter problem hotline, and MOST importantly, they need volunteers to call voters and talk them through filing affidavits to make sure absentee ballots which were improperly filled out or not witnessed (still a NC requirement) are validated. I will be getting signup details shortly and will pass them along.

I am so glad I live in a state that makes it very easy to vote early or absentee. New Mexico.
