A good bookie wouldn't care what the outcome is, because ideally they make money regardless of who wins.
If they continually adjust the odds, then when the odds go up, more people bet on that person. When the odds go down, less people bet. With these adjustments, they have enough people betting on each person that they win money regardless of who wins.
