I'm thankful that I was able to hunt my turkey and provide my family with a good steroid free meal, not some turkey raised and slaughtered in horrible factory farm.

so I have to rely on store bought. I just rely on the "free range" fowl. While I know the minimum is an hour outdoors daily, at least they got to breathe fresh air and see the sun during that hour.

I care about my fellow creatures on the planet even if I don't like some of them much and eat others.

and, I believe, they're fed organic, chemical free feed. If I didn't hunt, that's the way I would go.

because they're isolated from the process and only see tidy, packaged bits of meat nestled into their styrofoam trays at a distant slaughterhouse.

A grand uncle was a butcher so I grew up seeing half carcasses broken down into roasts, steaks, chops, and hamburger, the bones sold for Fido and stocks. He might have lacked the efficiency of the large scale, centralized operation but he did things to order and knew the difference between good and bad.

I miss butchers. I wouldn't even begrudge their thumbs on the scale.

It's too easy to put a meat order in to a big packing house and that's the way most markets do it.

There were plenty of butchers back in Boston, especially around Dock Square. There are a few here, usually in carnicerias, Spanish meat markets. They usually buy small orders from small growers and are the only place you can buy decent soup bones.
