I think people are posting them on Facebook and they

Facebook is loaded with pictures of the empty cheese sticks.
Maybe everyone is removing the cheese ?

(16,327 posts)Not often, but enough for me to be annoyed. I think the problem is in the deep frying process. Every one that I got without the cheese inside had the outer breading cracked -- my best guess is the cheese liquefied during the frying process and oozed out the crack.

(7,527 posts)The same thing happens in the oven to cheese sticks (or any cheese-stuffed meat such as cordon-bleu)...if the cheese boils, it erupts through the outside and runs out. They probably should only be in the fryer probably a minute or less, and can't be cooked ahead - they're a fast cook-to-order appetizer and a bad idea for McDonald's in the first place.

When cheese gets too hot a lot of it evaporates leaving only the solids.
Think condensed milk but even more.
When I cook pork tenderloin for family, I put swiss cheese & mustard between two sides and tie it up.
After cooking, all that cheese has reduced way, way down to an intense bit of darkened, gooey on the inside/crispy on outside puddles.

(12,647 posts)I would suspect they get them from the same supplier, in fact. As a product, if cooked correctly, they're not too bad. The marinara sauce is just like a standard Bertoli's in a jar. Better than Chef Boy-R-Dee, but not as good as Newman's.
However, due serving time constraints McDonalds has set to keep their line moving, the fry is never long enough and they end up being more like warm string cheese sticks coated in a slightly "crunchy" garlic tempura that is only a little bit hotter, instead of a ooey, gooey, cheesy mass surrounded by a crisp shell of garlicky goodness. Which is what Mozzarella sticks are supposed to be.
I suspect from the picture, the person was able to pull the stick out of the shell, and claimed that's what s/he was sold.
