What if Trump is convicted upon impeachment or the 25th Amendment were invoked, and

he refused to leave?

The dust has settled. A new president has been selected. Mike Pence won't go into the Oval Office and conducting business elsewhere in the East Wing or somewhere in D.C.

Would Trump dig in or would he be grateful and leave for New York ASAP?

I think he's actually really good at pretending to pack up and leave. For most of us, if everything fell apart, we'd do a lot of self-reflection, cry, call our friends, lean on family --- and it would be awhile before we'd peer out of the hole and figure out how to rebuild ourselves.

Trump won't consider it defeat for more than a New York minute - he'll just climb back up and restart his carnival barker routine as though he never tripped at all.
