Lots and lots and lots of gums. There's your problem.
The gums are added to prevent ice crystal formation, prevent melting, and extend shelf-life. It's also why cheaper brands of ice cream--Walmart especially--have a foamy, plastic-y, marshmallow-like consistency that doesn't resemble real ice cream. Injected air bubbles, as mentioned by a previous poster, also play a role.
The gums are FDA-approved and not particularly bad for you. But they are disgusting.
