(66,310 posts)Pretty much my go-to lunch for at least a decade now. I usually brown-bag it at my desk, eating lunch while I finish charting patient visits. Twice a week, I have lunch at the sandwich shop on the same street as the homeless shelter where I go to hold clinic for the residents there.

(40,416 posts)I have eggs, but no celery. And I usually add some mustard; don't know why I didn't mention it.
Celery just doesn't stay crisp long enough to bother with. I make exceptions in winter when I make a big crockpot of made from scratch beef barley soup. Still, much of the celery leftovers goes to limp waste before I can eat it all. Plain celery is just not my bag.
Add: Grated carrots, too, if you care at all.
