Sugar wouldn't work well, but maybe a maple syrup glaze with almonds or walnuts.

that just gave me an idea! How about glazed buds? I'm trying to think of a savory glaze that would make them crunchycrackle-y as if they were candied (sweet doesn't sound appealing with cold cuts.) That might be worth it.
