Since I may be one of the few humans on earth who despises pickles. Having long ago despaired of success with ordering NO Pickles on fast food, my automatic reaction is to open the sandwich and open the window. My husband tells folks that I have littered the highways of America with pickles from coast to coast. Pretty picture, but I will not be celebrating today.

a pantry full of homemade pickles and relishes.
Cucumbers mature nearly overnight in southern KY, as do zucchini and yellow summer squash (hot dill yellow squash is awesome)

I've made bread and butter, mustard, and 14 day pickles either by myself or with my mom.

Yep even watermelon rind pickle.

My Granny made this relish-y thing with green tomatoes, cucumbers, pickling spices and something hot; we called it Green Tomato Ketchup but it was sort of like a pickallili, and I wish I knew how to make it. We ate it with our pinto beans or great northern beans and cornbread .

A staple at large family dinners and totally unavailable in the Northeast. My sister used to take several jars back to Connecticut whenever she could. (along with white self rising cornmeal, Great Northern Beans, Mennonite Cinnamon rolls, and pulled pork barbeque with hot vinegar sauce)

When I lived in Boston I always took beans and cornmeal.

We get the pickle chips. I have a large Tupperware pickle container and it is just the right size to hold that giant Costco sized jar

They are a hot/sweet pickle and good on everything.

My dad, ever the frugal one, once got a great deal on a shit ton of cucumbers...

So we made pickles

Every kind imagined.

And since I was young and easy labor, I got to stand on a chair and stir the huge pots of vinegar and whatnot

I hate that smell

I avoid those things like the plague

Only once in a blue moon will I ever get a craving...

. . .but the Armenian/Turkish/Middle Eastern pickles called toorshi is closest to me. My maternal grandma used to make it every autumn.

more than a couple bites is too much. I had my hip replaced a couple years ago and was determined to lose some weight. I bought a big jar of dills thinking I'd just get in the habit of snacking on those. I can't do it. It even sounds good thinking about it, but I can't eat a whole one. I ended up slicing them to use on sandwiches.

They’re clean tasting, crispy, and crunchy. It’s the only kind I ever buy. Unfortunately, they were bought by a corporate behemoth, but the recipe hasn’t changed, so far as I can tell. I’ve been eating them for decades.

They are especially good on sandwiches. I get the "sandwich sliced" kind so you can just layer them or eat them plain. In fact, I wish I had some now. I love most good kosher dills, but Claussen's are by far my favorites!

homegrown tomatoes are homegrown tomatoes, and even the green ones taste better.
cherry tomatoes work best.
toss in a good super hot pepper. mmmmm.

also very fond of spicy carrots.

On a turkey sandwich with a little mayonnaise. My favorite way to enjoy the turkey after Thanksgiving.

These were the largest of the cucumbers, the overgrown ones, peeled and sliced into rounds about 3/8 inch and the seeds removed. The resulting ring was pickled in a sweet brine spiced with cinnamon sticks and cloves with food coloring(?) to create a dark green pickle that was a special treat.

it was actually good.
You could defiitely taste the dill and the pickle.
