...but it was probably someone that made an open ended burrito. They probably washed it down with Diet Dr. Pepper and put mayonnaise on their fries.

(4,925 posts)She always made them with 1 end open. She taught all the kids to make them this way. We are all 100% Mexican descent. That is not to say the different areas made them differently, but this is how we made/make them.

(13,665 posts)I never thought about it, but now that you mention it, I think enchiladas are open at both ends. I sways thought of them as little burritos, covered with sauce/cheese/toppings, then baked.
I really don't know much about Mexican food, though. I do know that spending an afternoon in a warm, sunny cafe, sipping a Dos Equis and snacking on fresh, warm tortilla chips and salsa (with just the right amount of cilantro) has got to be close to heaven.

Burritos are made with a soft, steamed flour tortilla and generally can contain any combination of spicy meats, refried beans, sometimes rice, chopped veggies and shredded cheese.
A Chimichanga is usually made with a flour tortilla, seasoned shredded meat, rice, cheese and refried beans without the veggies. It's folded closed and deep fried, or heated in the oven until warm. It's often served with Chimichurri or Enchilada sauce and topped with some guacamole and sour cream.

Every Sunday morning I go to our local Blake's Lottaburger to get me and Sonny Boy breakfast
burritos. I've been doing this for years and using my powers or observation I can give fairly accurate
directions for folding a both-ends closed burrito:
First, pre-warm your large-size flour tortilla.
Second, place the burrito filling of your choice on the tortilla. It's best if the filling is hot and straight off the grill.
Third, orient the tortilla/filling so that the filling is horizontal from left to right in reference to the folder.
(that's you)
Fourth, turn the edge of the burrito closest to you over a little.
Fifth, turn the tortilla edges at left and right over a little.
Sixth, Proceed to finish rolling away from you until you've achieved rolling both-ends-closed burrito.
Now bag it and call my order number! I'm hungry! (oops, got carried away)
This all takes some practice of course. Modify as you wish. Enjoy for sure!
