Fish Fail -- Anyone have a good fish taco recipe?

I am partial to citrus and lime recipes, though the one I tried tonight was okay, but not great.

1. I make mine with Don Pancho Cilantro Lime Crema from Costco.

2. Are you using battered or grilled fish?

Pan-seared, ceviche (Rick Bayless has a great ceviche recipe)?

What kind of tortilla are you using?

I would use a good corn tortilla. I would probably include avocado slices. Perhaps mango.

I would make a simple cabbage coleslaw with olive oil, lime juice, salt, pepper, Jalapeno and/or Habanero, maybe a splash of rice wine vinegar and a little honey. Slice the peppers really thin using a mandolin.

You can also make a nice sauce with mayo, sour cream, chipotle.

Start with good fresh fish cooked the way you like.
