My brother makes bomb spaghetti and meatballs, which we had yesterday.

My SIL cooks the hell out of whatever meat you put in front of her, and she also kills at mashed potatoes and from-scratch mac 'n' cheese, which we had tonight.

As I was thanking them for yesterday and today, they both looked at me and said, "You gotta get a dish, bro."

So as far as home-cooked dinner goes, it looks like the free ride is over.

and garlic powder and salt and pepper. Serve with store bought garlic mashed potatoes and microwaveable cut green beans. Easy peazy.

Yum!
Since it’s just 2 of us at home I often buy a pack of chicken breasts and freeze most of them. Cleaning out the freezer I found at least 10 big boneless breast and a couple packs of tenders. So it’s chicken fajitas, chicken soup, chicken piccata, chicken wrapped in bacon, sweet and sour chicken and more recipes I’ll dig up.

Baked Bean Casserole

Level: Easy
Total: 1 hr 20 min
Active: 25 min

Yield: 12 servings

Ingredients

Cooking spray

1 1/2 pounds lean ground beef

1 small onion, finely chopped

1 bell pepper, cored, seeded, and finely chopped

Two 16-ounce cans pork and beans

1/2 cup barbecue sauce

1/2 cup ketchup

2 tablespoons spicy brown mustard

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

4 tablespoons brown sugar

6 to 8 slices bacon, cut into pieces and cooked

Directions

Preheat the oven to 350 degrees F. Spray a 9- by 13- by 2-inch casserole dish with cooking spray.
In a large saucepan, brown the ground beef, onions and bell peppers. Add the pork and beans, barbecue sauce, ketchup, mustard, Worcestershire sauce, soy sauce and brown sugar to the mixture. Simmer for 5 minutes. Transfer the mixture to the prepared casserole dish. Sprinkle the bacon over the top of the casserole. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and continue to bake for an additional 10 minutes. Let the casserole stand for 10 minutes before serving.

I've been known to sprinkle cheddar cheese on top and have also served it over hamburger buns as sort of a sloppy joe type thing.

Sometimes to save on ingredients I buy the Bush;s Baked beans that already have brown sugar and bacon mixed in. Of course, there is nothing wrong with more bacon.

By the way, Trisha Yearwood claims this, but I have a (at least) thirty year old Southern Living cookbook with it in it.
