(31,513 posts)bacon grease to lightly coat the potatoes when you toss them and fry them at a medium high heat.
I think the cast iron has a lot to do with it since it distributes the heat so evenly. I hope this helps.

(95,244 posts)I will keep plugging away. We do have a nice old cast-iron skillet.
The nearest I have managed so far has been in a wok, with a good pool of bacon grease in the well. Where I grew up, bacon grease was employed for just about everything, there was always a tin of it out on the counter. I was nine before I ever saw a bright yellow scrambled egg....

(22,025 posts)They're in the upper-right corner. They're fantastic even though they are a little fussy to make. They're crispy on the outside and creamy on the inside.
Fondant potatoes, in the lower-left corner, are also quite delicious but have too many steps. More importantly, they're incredibly messy and you end up with spattered oil on your stove top and splattered oil al over the inside of your oven.
Actually, I'm with pnwest above: I love them all! Especially hash browns and German potato pancakes.
Damn it, Floyd, now I'm hungry!

(184 posts)I'm gonna say McDonald's French fries - when they are hot and fresh you can't beat them. They have to be hot, sprinkle a little salt and pepper on them, and eat them in five minutes. And no ketchup.
Second would be mashed potatoes with garlic and butter.

(12,419 posts)A simple recipe that's surprisingly difficult to do right, as you have to gouge out the potatoes from the skins without ruining them. Once I've got the mashed in the skins, I score with a fork and top with a pad of butter and a generous sprinkle of paprika.

(63,221 posts)to rinse a lot of the excess starch off after cooking so they don't get heavy and gluey.
Another favorite of mine, and they only seem to be found in upstate New York where I grew up, is salt potatoes. They are kind of a summer BBQ treat and you just boil them up w/ the right amount of salt (usually included in the bag), they are small, like new potatoes, but when cooked right they are just melt-in-your-mouth creamy and so delicious, especially w/ some good butter and fresh parsley.
If you ever have a chance to try them, I would highly recommend them.
Here is a recipe where you can make them on your own. I'm not from Syracuse (about an hour or so away) but they only seem to be a "thing" in the central/upstate NY region.

Any frozen potatoes (fries, tots, hash brown patties) come out GREAT in the air fryer. Also awesome for baked potatoes, especially in summer when you want a baked potato with your grilled steak but dont want to use the oven.
But the best potato dish (IMO) is what we PA Dutch call funeral potatoes. Its the casserole made with frozen hash browns, onions, canned soup, sour cream, cheese and butter, with a corn flake topping. Comfort food at its finest.
