(14,958 posts)use the device without it. The glove is still in perfect condition because I'm very cautious/timid even with it.
Never, ever, ever use it on autopilot. Every motion deliberate and thoughtful and focused, every time. I treat it like a table saw or other shop tool -- equal measures of respect, fear, and appreciation. These days, a trip to the ER for an avoidable hand injury is a disaster in the making because of COVID -- must avoid at all costs.
But mandolines are awesome because of the potential for consistency and control. Many dishes are improved when various parts are sliced extra thin or very uniformly or both.

Or you can simply finish that last piece off with the knife.Chop, chop and you are done.
There is no sense in cutting it close on the mandoline.
