(102,188 posts)drought in pumpkin patches that year (a couple of years back)?
Well, a friend of mine immediately went out and bought several cases of the big 29 OZ. cans and of course gave them to all her friends. Well, I don't typically bake sweet foods. I tried to use it in smoothies, but, no... I did not manage to find a way to make it taste good sans ice cream. Of course, my dog got some pumpkin too, but seemed to tire of it as soon as I did.
So, I still have cans left. I will make a "vegetable" side dish of it with a little healthy "butter," some cinnamon and a couple of tablespoons of sugar-free pancake syrup-which isn't bad at all, though not too frequently. And, it is healthy with lots of vitamin A and fiber.
But damn. I am not looking for anything pumpkin again for the indefinite future or at least until I get rid of these never-ending cans...LOL

(35,643 posts)There are so many that are good: pumpkin muffins, pumpkin zucchini bread, and pumpkin cheesecake.
Oh, and personally--pumpkin chocolate chip cookies are outrageous, either as a bar cookie or drop cookies.
Ocelot, that was funny. Soon it will be pumpkin 24/7.

(102,188 posts)Yes, they are all delicious, but sadly... I will try the pumpkin soup, though.
I suspected that might be the case when you didn't mention them in your post. However, when you're in a baking mood you can always make some for loved ones as a nice surprise or for dessert at a family gathering.

hlthe2b, I have often made my pumpkin goods with fresh pumpkins, since I grow them, but I assure you, a can of pumpkin is a labor-saver. It takes me forever to get the fresh pumpkin in a form where I can cook with it.

I'll start with chicken stock (veg if some of those heathen vegans will show up) and throw in a can or two of the pumpkin. I prefer to make my own pumpkin mash, but am usually too lazy. Besides, the better squashes can be expensive, so I use them for other things.p
One of those ofher things is throwing chunks into the soup. This is one my favorite uses for butternut-- it doesn't have that huge hole filled with seeds. Some people believe the skin and seeds shouldn't be wasted, but that's just a nasty Russian trick from when they were starving during the war.
Then some gabanzo and pinto beans. And some black beans for contrast.
Celery and scallions are options, as is dairy. Yogurt can work.
Seasonings are anything you have around. I always use cinnamon and tumeric to start. Then a little chipotle or paprika to wake it up. Parsley and basil, and maybe a little garlic.
Meatballs? Yeah, why not?
But recipes? No way. It will be what it will be.
I do often hollow out a big halloween pumpkin and use it as the serving bowl
Aside from decoration, though, those big orange pumpkins are useless. Much of the pumpkin hating public was fed those things instead of a decent cucurbit.
