Texture is important. Like okra. That may be just as bad for you.

I make it in a bundt pan. It used to be a huge hit at the summer swim team banquets years ago. Don't knock zucchini until you've tried this!

Chocolate Zucchini Cake

Preheat over to 325 degrees.

1 cup brown sugar
1/2 cup white sugar
1/2 cup butter
1/2 cup oil

3 eggs
1 teaspoon vanilla
1/2 cup buttermilk

2 1/2 cups flour
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoons baking soda
4 tablespoons cocoa powder

3 zucchini, approx. 6 inches long

1/2 to 1 cup chocolate chips


Cream together in large bowl the first 4 ingredients (sugar, butter, oil).

add eggs, vanilla and buttermilk. Stir well.

Add flour and spices, baking soda and cocoa.

Grate zucchini into bowl. Stir until blended.
Pour into large, greased, floured 9 by 13 inch pan.

Sprinkle chocolate chips on top.

Bake at 325 degrees for 45 minutes.
