After yesterday's "soul food" debacle, I got take-out dinner tonight at a client's restaurant

I got the beef enchilada platter. The ONLY difference between this photo and what I got is that mine came in a styrofoam take-out box instead of on a plate. I ordered it because I remembered taking this photo and had the mental image spinning in my hungry little brain.

Two BIG beef enchiladas BUSTING with shredded beef.

Refried beans were the perfect consistency...just "wet" enough but they held together nicely.

Rice was just "dry" enough.

This is a LOT of food...I was STUFFED.

And it cost the same 11 bucks I spent for yesterday's "soul food" fiasco.

This is one of my favorite clients, and since moving last October, I now live a couple of miles away.

Does it come in vegetarian? One of my favorite Mexican restaurants here in DC has really good vegetarian Mexican but I find it hard to find vegetarian Mexican food otherwise.

Doing this for a living has trained me to ask the appropriate questions:

1). Is the rice cooked with chicken broth? (NO...it's cooked with water).

2). Are the refried beans cooked with lard, or are the pinto beans cooked with bacon/pork? (NO. Refried beans use olive oil for the fat. Pintos have no meat.)

So this is 100% vegetarian and it is HUGE.

ALSO, the enchiladas I ordered are available as beef, chicken or cheese.
