1. Depends on how traditional you are.

There are a lot of very adventuresome interpretations. For example, shrimp, Monterey Jack, black olives, jalapeños, cilantro, and sun dried tomatoes.

7. A recent favorite...

I'll fry up some well ground chorizo with onion and garlic and use it as a dip for tortilla chips... A bowl of sour cream on the side and it's freakin heaven.

8. scallion, salsa verde, sliced olives....

.....lotsa cheese (first, so it melts), sour cream on the side, and perhaps black beans, avocado, and tomato.

Oh, and pickled jalapenos. Gotta have those.

Tomatoes, cheese, avocado, salsa, sour cream, beans. I like a lot of stuff on my nachos. No meat but everything else.
