other than a few Okinawans who kept pigs, and made a bundle in the restaurant business.

Hawai'i must, however, bow down to Guam as the undisputed Kings of Spam. It's difficult to preserve fresh meat with their frequent power outages. So popular is the stuff on Guam that Hormel uses it as a test market for new flavors like Tabasco.

but looking at my reply again I realize it looks more snarky than funny.

It was a different experience going down there and experiencing the place with friends and their families rather than tourists. I'd never visited before so I assumed it was going to be all luaus and mai tai's instead of the actual foods that they ate on a daily basis. I am someone who will eat what's put in front of me at least once and I kind of learned to enjoy the stuff....kind of, it's still not on my main home rotation.

That being said we did get a full on Luau a few days before we left and that more than made up for all the Spam and Egg breakfasts the other days.

Thin crust (slightly charred bottom, bubbled crust), real mozzarella, good sauce. A sprinkle of oregano and olive oil. And double anchovies. That's it.

(If you're ever near Mount Vernon, NY check out Johnny's. Been in business since my mother was a young girl. Moved a couple of times, but still the same outstanding pizza. My mouth is watering just thinking about it. I've yet to find anything comparable here in Seattle <sigh>.)

Nov 2013

Crust: a white potato boiled in beer and then mashed and added to some garden brine vinegar, plain yogurt, corn meal, whole wheat flour, white flour, sugar, salt (use your own judgment on the amounts of each)

Let crust dough rise for several hours, punching it down once or twice, then spread it into a pan or pans

Sauce: pureed garden tomatoes mixed with melted cheeses and seasonings

Topping: chopped onions and green peppers, mushrooms, some kind/s of meat if you must, liberal sprinkles of cheeses, whatever

Mmmm

I do love this pizza called Grandmas Pie. It's a crisper crust with garlic, marinara and fresh mozzarella. But in patches or clumps. So each bite is heavier on a certain flavor. I dunno if I'm describing it right, but it's tremendously fantastic.
