And makes a damn good one.

Tonight Miz t. is otherwise engaged, so I got the nice lady in the deli department at the Winn-Dixie to fry me up a batch of chicken livers.
Ate two on the way home.
YUM!
Rounding up my supper with some baked beans and slaw.
Balanced diet, ya know.

I do really love chicken liver paté though. Maybe I should try a fried one huh?

Will not touch beef liver though.

(4,465 posts)My Paternal Grandma who was Southern to her core made the BEST cornbread. She used an ancient cast iron skillet, it came out a little crispy on the top and bottom, omg. SO good.

Melt butter in cast iron skillet.
Mix dry ingredients: Meal, Flour, salt, pepper, paprika, smidgen of sugar.
Mix with wet: Buttermilk, 1 egg.
Cook appr. 30 minutes on 350. Or, stick a toothpick in (or broom stick, lol). If it comes out clean, all done.
Not figure friendly though! lol!
edit: Because I left out meal in the dry ingredients: LMAO!

(4,465 posts)My Gran passed away when I was a teenager, I never did get her recipe. I'm pretty sure it had bacon grease in it.

(4,033 posts)I love this meal. I used to share it with my dog. She loved it so much, I fed it to her for her last meal. She could barely walk and had no interest in most things, but when she smelled them frying, her nose started twitching and she tried to walk. I hand fed them to her and she licked my fingers when they were gone.

(115,584 posts)Livers are internal organs - guts. I get skeeved out at the thought of eating innards. And liver (beef liver, anyhow) smells like pee. Also, the liver acts as a filter so who knows what kind of toxic crud is in them? It's ok for cat food, maybe, though my cats aren't crazy about liver either.

(2,805 posts)Who loved our dog used to sautee chicken livers in about a pound of butter and with little cubes of bread and bring them over for the dog. They smelled really good but she would only let us kids have one little taste and give the other full pound to the dog. It was funny because they would still be warm so she would have fried them all up and then rushed over to give the dog her treat.
She would also stop by and say, "I'm taking Frisky for an ice cream cone, do any of you kids want to come?".

Sauteed chicken livers w/ onions and garlic over rice and served w/ asparagus, or the old-school cocktail snacks (sauteed chicken livers wrapped in bacon and broiled) are my favorites. My wife thinks I'm crazy, but it's one of my comfort foods.

(32,074 posts)Popeye's has good fried livers. There's a chain in the Chicago area called "Browns" that used to have yummy ones, too. Haven't had them in 40 years, and don't know if they even sell them any more, let alone if they are still good.
