I got hooked on this at a garden fund-raiser that had been catered by a pretty upscale company. Given I had had to drive quite a ways to attend, I certainly wasn't going to drink alcohol. I was really pleased that this was the primary alternative (as opposed to soft drinks)
I plan to enjoy quite a bit over the hot summer season.

Julienned in cold sake.
That is one of the most refreshing cocktails I have ever made. A splash of vermouth and some pickled ginger -- even more heaven!

Here's one for you:
For years I've been making smoothies with cucumbers and plain low-fat yogurt, with about a tablespoon of avocado. Our family calls it Cold Green Slop, and it's delicious.
I usually dice half the avocado and pour the mixture over it for breakfast or lunch. I used to do this in a blender, but now that I have a hand-held blender it's even easier.

(3,366 posts)Peel, de-seed a cucumber. Grate it & squeeze out as much juice as you can (maybe put that in your water!)
Add a little garlic, fresh lemon juice, four big spoonfuls of low-fat plain Greek yogurt.
Sprinkle with sea salt, pepper, dill weed.
yummmmmmmy! and totally guilt-free

(35,654 posts)I make this fabulous Japanese cucumber salad at least once a week. I can totally identify with your cucumber drink because when I am through with the cucumber salad, I drink the ice cold vinegar with the cucumber juice in it straight up. It is so good.
My cucumber salad is easy: just slice cucumbers, use rice vinegar, put in a little sugar or agave, and a little salt. So, so good!
I am going to try the cucumber drink this summer. Cucumbers are very cooling.
