Last year there was no fruit, even though I kept the tree watered through the drought and the heat. But look at the tree last weekend:

On Tuesday morning, there were strong thunderstorms in the area, so I picked all the ripe fruit. What a boatload of peaches! The only thing to do is make some peach and mango salsa!

Take some peaches and mangos:

And some sweet onions and jalapenos:

Assemble in pot with a bit of purified water:

With mango:

And peaches:
[URL=.html][IMG][/IMG][/URL]
Simmer over medium heat until thick:

Get the jars ready:

Process for 30 minutes. Batch numero uno:

And numero dos:

So far, 19 half pints good for the coming year. Are there still peaches left? Yep:

Long ago, I had two peach trees and they took turns giving us lots of fruit. One tree would bear a lot one year and the next year, the other one would. We always had more than we could eat.
I made jam now and then.
And we gave the rest of the peaches away to the neighborhood.
My climate now won't support the trees. They need heat and sun and we just don't have it.

Spring up here was long and cold this year, so it doesn't look like I'm going to get any.
But I can't complain, after delivering bumper crops for several years running my sole productive peach tree deserves a break.

(3,408 posts)I never measure anything, I just throw it together. 1 or 2 sweet onions, 3 or 5 jalapenos, 3 mangoes, many peaches, and a bit of water, maybe 2/3 cup. Cook over medium heat until thick, stirring frequently, about 15 minutes. Spoon into hot 1/2 pint mason jars. Wipe jar rim and threads and add lids. Return hot filled jars to water bath and boil for 30 minutes, longer if your elevation is above 1000 feet. Remove jars from water to a towel on the counter. Let stand until cool. Remove band and test seal. Write the date on the lid and store in your cupboard. Easy to do, it just takes a little time. My mother taught me how to can food at home. She and her family made it through the Great Depression with a large garden and home canned food. Bon appetit!

(1,419 posts)always produced copious amounts of the juiciest, most delicious peaches. We canned, made jam and froze them. Busy but such a pleasure to taste that just picked flavor and know there were more in the cabinets and freezer.

I love 'em, but can't grow them where I live. Oh, we can grow peach trees, but due to inevitable late cold snaps we get no fruit. We have to make the trek down to SC for ours. But there's nothing better than home canned peaches and peach jam in the middle of winter. They're like little jars of sunshine!

(3,408 posts)Just thought I'd share one of the good things about living here in central Texas. I can't grow apples or cherries down here, but the peaches do well if there is plenty of rain. I wish I could send y'all some. Now if my plum trees will do as well...

(3,408 posts)I was born and raised in Columbus, Ohio, and went to the university in Athens. I miss the apples and sour cherry trees that grow there! So I have to make do with peaches.

(3,818 posts)I have a peach tree but it is a few years yet from producing fruit. I read recently for apple trees it takes forty leaves to make one apple, so it is probably something similar for peaches. The peach and mango salsa sounds great!

I have neighbors with peach trees and they are simply loaded down with fruit this year.

(641 posts)The house down the street had a 40-50' peach tree loaded every year. The owners let any neighbor who wanted peaches pick them. They sold the house 2 years ago and the buyers cut it down - they said it was "ugly" and spoiled their view of the park behind the house. The neighborhood cried.

(54,990 posts)I have one sad little peach tree. we left it in the store container way too long and then when we finally got it in the ground, that next summer it had a few fruits, but the grasshoppers ate everything, including the peaches - just left seeds hanging on the stems. and they chews a lot of the bark. it is still alive, but barely. has one peach this year, but it doesn't look right and isn't ripe yet.
LOVE peaches, one of my favorite fruits. I would quarter or slice a bunch and freeze them for cooler weather and probably make pies.

(563 posts)None of the groceries stores in my area have had good peaches this year, the only place to get good ones is the farmer's market and those sell out in incredibly fast. Wish I could just go out in my backyard and pick one haha!
