I had some that I bought before Christmas that got lost in the back of the fridge. I found it the other day and it had pink spots and the entire surface was fuzzy white. Rather than take a chance, I threw the whole block out.

My parents used to eat it on hardtack as a snack before the doctors made them cut back on salt.

In the sixty years I've been eating it, it seldom stays around long enough to go bad but those times were memorable!

But those steak houses that served a quarter head of iceberg lettuce with fresh blue cheese dressing won me over. It just tastes good.

There is some type of Saga that has green mold that is delicious. I just never see it in the stores. Worth seeking out because it is milder than Blue cheese. Interesting but not overpowering.
