They grow well here and are quite pretty if you get close enough, which I did today. 
Well, we don't have any deer hereabouts, so nothing eats our flowers! I just love how they look when they first come up, before they open.
Good luck with your crinum plants! I've never heard of them, so maybe you can post some photos when you have flowers!

We have just a couple of little strips alongside our driveway, and so we don't have as much room for them as you do.

I often hear stories like yours from my friends who live in deer country. I would be devastated if we had deer, and they ate my flowers too.
Have you tried planting the Monarda in a more sheltered spot? It's got to be hard to find a place where they'll thrive and where the deer can't get to them.
