Grind up the sirloin if you want ground beef. KitchenAid had a terrific attachment for the home chef...attachment goes on the stand mixer.Actually... this will be a great burger ad well.

That's my guess. Ground beef can be used to make a meal for a small family verses a steak per person.

I often buy ground sirloin instead of the "lesser" forms of ground beef, and am largely repaid by the reduced waste fat, as well as a better flavor.

But then we always try to buy local pastured beef rather than feedlot critters.

I sense it would be great. Don't know what fat to cut it with??? I have had ground Buffalo many times...made burgers..used bacon for the fat flavor...

Make fajitas (which I am eating right now). You do not need to serve a huge steak to each person. Mix that puppy with lots of vegetables. It goes further and is healthier for your. I try to target $4/lb for sirloin, but I have been paying $5/lb lately.
