Can someone recommend ONE good book that thoroughly covers the I/P situation ? I say one, because, knowing myself, I'm not going to read ten books about it. On the other hand, if I finish the one book and I'm still really curious, I can read more.

He has written a few books of an academic nature about the history of Israel, if you then wish to pursue the subject further.
For the current/recent situation, I recommend David Grossman's 'The Yellow Wind' and 'Death as a Way of Life'; and Izzeldin Abuelaish's 'I Shall Not Hate' - warning: these WILL make you cry, especially the latter.
