Everyone loves muffins, but how about one with a full hard-boiled egg inside! If you don’t feel like dealing with the sandwich making, and keeping ingredients separate to avoid a soggy mess, these portable and packable Egg Stuffed Muffins are for you! Oh, and if you like these, you should give these Egg Cheddar Biscuits a try too!

Ingredients (makes 12 muffins)

12 hard boiled eggs, cooked and peeled
5 tbsp vegetable oil
2 tbsp butter, melted and cooled
1 large egg
1 cup buttermilk
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 cup grated parmesan cheese
1/4 tsp salt
1/4 tsp garlic salt
parsley, roughly chopped
6 slices prosciutto, chopped

1. I'm making my first attempt at English muffins today. I'm trying to go all homemade stuff

as far as is practical. I'll be down to only tortillas for bread products I buy, and I may try making those too. I haven't looked into it yet, but tortillas probably aren't too hard.

I am a bread and pizza crust maker.. but have wanted to try tortillas too. Have seen it and looks very easy. I only like flour tortillas...BUT having a press helps. Saw one at a market one time wish I had bought it.

8. They turned out good, but narrower and taller than the Franz muffins I usually get.

I just ordered some cutters with a couple that are wider. I'm sure I just need to roll the dough out a little thinner and use a wider cutter and they should be just right.

cheese and prosciutto most . Boiled egg on the side.
