And there's still some brownies if I choose to have dessert.

(23,239 posts)served on baby greens with cucumbers, tomatoes, snow peas, toasted hazelnuts, fried capers and a nice dollop of burrata cheese...honey mustard vinaigrette. I'm making naan on the flat top to munch on the side. I'm so tired! I hauled garden dirt all day. I'm looking forward to a nice dinner.

(35,428 posts)to haul dirt AND make such a fabulous dinner! I usually conk out right in my computer chair after gardening. That's why I frequent the Polish delis in planting season.
The greens, toasted hazelnuts et al with the burratta ...oh, yum!!

(16,692 posts)For the filling, I used ingredients found in a Western omelet: sausage, green pepper, onion, garlic, shredded Swiss and cheddar cheese. I added some broccoli, too. I made it up as I went along
For the crust, I made crumbs from the end of a loaf of bread I baked last week, and added mayo and a dab of butter. It made a nice crust.
I was going to have it with spicy avocado and freshly pick cherry tomatoes on the side, but the pie was enough.
Preheat the oven to 350, center rack.
Crust:
3-4 oz bread crumbs (about 3 large slices or 4 small slices bread)
1/2 cup mayo
1 TBS butter
Melt the butter in a skillet, remove from heat.
Add the bread crumbs and mayo, mix together, pat into the bottom of a 9" pie pan. Set aside.
Filling:
4 large eggs
2 TBS heavy cream, whole milk or other milky liquid
1 cup shredded cheese ( used half sharp cheddar, 1/2 Swiss)
1/3 cup chopped fresh onion
1/3 cup chopped fresh green pepper
1/3 cup broccoli pieces
4 oz sausage, cooked and crumbled (optional)
Garlic, salt, pepper, red pepper flakes to taste
In a skillet, brown the sausage and remove from the pan. You can lay it in the crust. Heat the vegetables in that pan, until they are softened, but not cooked through. While the vegs are softening, mix the eggs with the cream, garlic, seasonings. and 1/2 of the cheese. When the veggies are ready, put them in the crust and let them cool a little. Pour the egg mix over the vegs in the crust and top with the rest of the cheese. Bake at 350 for about 30 minutes, till set. Makes 1 to 4 servings.
