What's for Dinner, Mon., June 7, 2021

Cold noodles with sesame oil, salt and pepper cashews, and diced scallion.

Tossed green salad with chopped cauliflower, red, green, and yellow pepper, scallions, carrot sliced on the mandoline, celery, and using romaine and mustard spinach as the greens.

Cold Beyond meatballs with barbecue sauce.

Dessert is vanilla pudding with sliced banana and Heath English toffee bits.

Cold ginger ale to drink.

I have to work tonight and I don't want to. I would rather do anything than go to work. It's only for about an hour, though, so I'm trying to get used to the idea. Nobody should work during a heat wave except essential workers. JMHO.

Or just cold cuts.

EvilTilapia was awesome the other day, btw! Made vile, worthless zucchini on the side and it was completely edible and almost tasty.

Grilled marinated boneless chicken breast.

Grilled corn ribs, (quarter the cobs lengthwise and marinate in a spicy tomato sauce).

Salad from the Landlady(!)'s garden with yellow miniature tomatoes, red onion, cucumber slices, chopped green pepper and a balsamic dressing.

Chocolate chip cookies and English tea.

I've had a lot happen in the last month: a wedding, a birth, a death (my dad), a property sale, a new business deal and we bought a cruising sailboat! I'm drafting a post about our new galley which is compact but complete. The boat is like a beautifully built tiny house and we're excited about our adventures to come and the meals we'll be able to have onboard.

hearing about was your various trips and also the golf course tournament buffets.

So this is great about the sailboat. Look forward to hearing about meals you make in your new tiny house on water.

But I am very sad to hear about your dad. My condolences.

selling a house..so haven't been around or cooked anything particularly interesting...don't want to get the kitchen dirty. It took a couple of months of renovation but sold in three days (Austintown Ohio)...for higher than asking...crazy market.

6. Chicken thighs

Coated bone-in, skin-on thighs with italian seasoning, salt, pepper, garlic powder, and a little cayenne. Cooking in the air fryer now. They were still a little frozen (ok, pretty frozen), so I added 10 min. to the cooking time. We’ll see what happens!

Boiled potatoes with butter and lemon juice and garlicky green beans on the side.

Made a pot of sweet tea earlier. I shouldn’t be drinking that much caffeine this late but it tastes good so I’m doing it anyway. Have a big day out with Mom planned for tomorrow so hopefully I’ll be able to go to sleep at a decent hour tonight.

Thawed out some spaghetti sauce I made in May. The spare fridge has frozen up again. Thawing it out while I wait for dinner. It's happening more and more often. I think I'll need to either replace the defrost wand in the fridge or replace the fridge. It's actually been converted to a kegerator so it's not exactly necessary. I'd like to keep it around though. I like homemade beer.
