What's for Dinner, Mon., July 5, 2021

I grilled up chicken and also sausages because the heat wave is coming tomorrow and I want to have things in the frig that require no prep. Tonight I'll have a little slice or two off the chicken breasts and half a sausage. They are too hot (jalapeno cheddar) for me, so I'll have to find ways of using them a little at a time.

I made an olive oil/herb/garlic/lemon juice marinade so the chicken would be easy to use in salads and the like over the next few days.

To go with it will be tossed green salad with blueberries and goat cheese. Macadamia nuts sprinkled over the top.

To drink: blueberry-basil kombucha.

Dessert: rice pudding with mango. Tea biscuits. Cold orange tea.

I love your salads! I’ve never thought of blueberries on a salad. Brilliant.

We’re going sort of Indian.

We’re anchored in New Haven harbor and the First Mate felt like spending the afternoon cooking.

She took a couple of pork chops and coated them with her own rub: cumin, freshly ground nutmeg, ground ginger and Indian vindaloo curry.

Basmati rice with cardamon and fried onions are accompanied with sautéed sweet peppers with garlic, chopped onions and tomatoes. When the onions are done, the chops get tossed in the pan to cook.

We’ve got a magnum of merlot that needs to be opened.

It’ll be delicious!

We are almost out of ice. And we’re at the end of fresh food.

Hopefully, we’ll be in NYC just in time for the hurricane!

3. Grilled pork burgers

with an apricot bbq sauce on brioche buns. Side salad with snap peas from the garden, cucumber, tomato and a creamy garlic scape salad dressing.

The cocktail for tonight will be Empress gin with a sparkling grapefruit seltzer…not sweet and so refreshing. This gin is lovely…not much juniper if at all and it’s purple! Colored with blossom of pea flowers…when you add the acid from the grapefruit, it turns pink.

6. A pantry meal that turned out better than expected!

I really need to go to the grocery store!

Picked the meat off a couple pieces of fried chicken (leftover, brought it home from work last night). Simmered it in a little butter and the juice from a can of diced tomatoes, along with some of the tomato pieces and diced, jar banana peppers. Tossed in some black beans (there was a can in the near-empty cupboard!) and sweet corn cut off the cob (also from work last night). Lots of chili powder, some salt and cayenne pepper.

Let it simmer with a lid on until the rice cooker had finished it’s job. Everything in a bowl and topped with what sour cream I could scrape off the sides of the container. Sadly, no cheese in the house. But, it didn’t really need cheese with all the sauciness. The chicken was extra tender and delicious.

It was tasty! And there are leftovers for lunch tomorrow so I don’t have to hit the grocery store until late tomorrow afternoon. Yay!


For dessert: a cinnamon roll (from work, lol! We are closed on Mondays and Tuesdays so, on Sunday nights, we take home stuff that won’t make it over the ‘weekend’)
