What's for Dinner, Sat., Aug. 7, 2021

Beyond burger on Brioche roll. Lettuce, sliced tomato, onion slice and Swiss cheese.

Sweet potato fries.

Cherry kombucha to drink.

Watermelon for dessert. I cut up a cantalope and a watermelon today and have five containers of melon! Here's a pic of one of them.

I can't do any watermelon now, I'm on a low sugar diet.

Tonight is pasta and generic homemade sauce. I threw everything at it.

I love watermelon in the summertime. So refreshing!

Today I made a totally vegan elderberry pie. The crust is graham crackers and coconut oil, and the berry filling is thickened with a chia-flax-hemp seed mixture. We have three big elderberry bushes in our backyard.

and corn on the cob. I'm trying something different for the corn. Usually, I just dump in at least a cup of sugar to cold water, put in the corn, and bring it to a boil, turn off the heat an leave it in the water while I finish whatever else I'm making. The corn ends up sweet, juicy, and perfect for slathering on the butter and salt.

Yesterday, my neighbor called to borrow some milk. I had half & half, so gave her that. She was using it for corn on the cob. She said she puts a cup or so of milk, some salt and a stick of butter in the water, then when boiling puts in the corn. I went back to get an ear when it was done and it was delicious. Didn't need anything added to it. So I'm gonna try that.

January before last, Senator Amy Klobuchar and Rep. Ilhan Omar had a hotdish (casserole) competition, and this was Rep. Omar's entry. It seems like a perfect combination of old and new Minnesota. I think a cucumber salad of some sort will be the only accompaniment. But if I had some watermelon like Cher's ....
