I'm copping out on cooking tonight and just having a store-bought cauliflower pizza.

Tonight, though, I'm going to cook a couple vegetable items but they won't be ready until tomorrow.

1. Cod in yellow curry sauce over jasmine rice.

Using a commercial yellow curry paste, coconut milk with my usual ass't veggies.

4. Hubs got a job! And I think I have one too. I decided to get an Italian Sub from Jersey Mikes...they

make Gluten-free ones. It was delicious. I got hubs the big club one on regular bread...and we had watermelon...since you talked about having watermelon in the last few days, I have been dying for one...and all the ones I saw after finally making it home Monday from Airport hell (Stuck in Charleston Airport two days and in a hotel in Charlotte three days) looked crappy. Today though, I saw a beauty and it tasted even better than it looks. I also had a gluten-free snickerdoodle that Jersey Mike's sells and hubs had a chocolate chip regular cookies. It was a simple meal but it tasted really good. Have a nice evening all.
