My husband convinced me to buy a couple of fresh Ancho peppers at a farmstand yesterday. I've never used any kind but the dried ones. What do I do with these? Can I just put them in salsa cruda or do I roast them or what? HELP!

(492 posts)You have a poblano. It's a super mild pepper and I like to substitue them for Green bell peppers anywhere they're called for. Not nearly as gassy and more flavorful!

but as other posters have said, anchos are usually dried poblanos. However, there is a variety of poblano called muleta isleno that is a darkish purple/brown when ripe.
There's a great book called "Peppers of the Americas" that has color photos of a lot of fresh and dried peppers, and recipes. Check if your local library has a copy
ETA: I use poblanos for stuffed peppers: rice, onions, beans or meat depending on my mood, a tomato-based sauce
