What's for Dinner, Sat., Sept. 4, 2021

I'm having dinner at a friend's house tonight. I know two things she is making:

--cold chicken plate with honey mustard sauce

--boiled corn with fresh creamery butter bought at the farmer's market.

We call it stuffed pepper casserole. We wanted to make stuffed bell peppers, but all we had was a bag of those assorted small peppers. So we just prepped the meat/rice mixture and chopped up the peppers and baked it in casserole dish. We're using a leftover half can of spaghetti sauce as the topping with mozzarella and romano cheeses added at the end of the baking time to melt on top. Side dish will be fresh roasted cauliflower with a cheese sauce.

and a little easier than regular stuffed peppers.

That reminds me of a chile relleno casserole recipe I got from an America's Test Kitchen book. All the ingredients, but put in a 9X13. Easier and just as delicious as making individual chile rellenos.

Keema Nariyah Saag (Hamburger Coconut spinach curry) and Basmati Rice, which I made Thursday. Curries almost always improve when they sit.

Did you know Oreos has a new flavor? Apple Cider Donut. That's our next Cookies and Cream ice cream flavor.

sesame beef and egg foo young. I made my own sauce for the egg foo young as I can't eat Gluten. The rest of the dishes were gluten-free. We also had pork fried rice. Hubs got Crab Rangoon and an egg roll. We have tea, lemonade, Gin and Tonic, water, or soda to wash it all down!

Roasted chicken thighs (soy sauce, pepper, garlic powder), potatoes with onions (olive oil, salt, pepper, fresh rosemary), green beans with garlic.

Nonfat Yogurt instead of sour cream, tomato instead of tobasco, but it's pretty good.

Leftover soup - I think it is better now than the first day.
Corn on the cob, I forgot there were two ears left. Past their prime but still good.
Edit: I forgot the to list cornbread.

They'll be more, but I haven't figured it out. It is a work night at the hospital for TJ so no sit down dinner. She doesn't get up until the last minute.

FLFC got up, asked for and got most of the ham from my bowl. He went out for a few and is dozing as old dogs do. I hope he has more appetite later.

garlic mashed potatoes, a mix of local corn, green beans and carrots, and for dessert, local Anjou pears poached in apple cider with spices. I cooked down the cider, added a little sugar, and after I heat it up again I think I'll add some dark rum. An Austrian Grüner Veltliner to go with.

Homemade pizza-on-a-boat. The FM made the dough a couple of hours ago and we’re going to try baking it on the stove in our largest covered pan. It’s a technique that she read somewhere so we’ll see if it works. We’d bake it in the oven but we’re nearly out of propane and can’t get more until the next harbor.

The pie will be topped with tomato sauce, (unfortunately from a jar), thinly sliced salami, mushrooms, slices of green pepper and covered with mozzarella cheese. We’ll finish off the last of our lettuce with a small salad.

Tonight, I’m tearing into the chocolate chip cookies.

NJCher, it’s nice you have a night off!

And a really good Scaly Bark variety watermelon from our garden. Strawberry smoothie, made with stevia.

We just got back from our monthly grocery shop, so we're exhausted. The BLTs are simple and the tomato comes from the garden.

There's ice cream or tapioca pudding if we go looking for dessert.
