I just found two whole pompano fish at Safeway. in Benson, Arizona! probably not very fresh on the day after Labor Day, but i don't care. I sure have not EVER seen them around here before!

Clean/gut (if you can,) and if grilled, make slits to allow even cooking and do NOT turn fish on grill. (Saw this yesterday, on Bizarre Foods.)

yeah I am leaning grilled too. wish there had been more so I could try both ways!

so rare to find a whole fish here. sometimes farmed trout but that is about it.
I see these are farmed a lot too. that is ok I guess, at least something different.
