What's for Dinner, Mon., Sept. 13, 2021

Crudite with carrots, pepper slices, celery, and cherry tomatoes. I made a spinach-chopped onion dip with sour cream, buttermilk, and a little mayo.

Sliced fennel, apple, and walnut salad. Citrus vinaigrette dressing.

Cold chicken brochette.

Dessert: cherries with vanilla rice pudding.

drizzled with a cilantro lime crema and fresh jalapenos. Sliced cucumbers and carrots on the side. No dessert for me during the week.

It's been a cool, rainy day so white chicken chili and cornbread.

Today I Learned (aka TIL).
I added harrisa paste to yesterdays leftover, and I would highly recommend that. The casserole was fairly bland yesterday despite the onions, celery. The hot paste mix was a good addition.

with this recipe for Pargiyot Three Ways, one of which uses harrisa. I actually made all three of the marinades, and all were delicious when grilled over chicken thighs... can't say that I had a favorite. I've thought from time to time about doing this again but now I'm definitely going to, thanks for the reminder!

Stopped at the co=op grocery and got a banh mi wrap and had it for dinner with some La Croix orange seltzer.

For later I have some salted caramel chocolate chip coconut milk ice cream

I mince them up with the garlic in my handy Pampered Chef chopper.

I had some leftover brown rice and mixed in with my bowl and threw on some cheese. It was soooo good.
