What's for Dinner, Fri., Oct. 1, 2021

Soup for dinner--vegetable-bean with garlic pork sausage, the sausages made fresh at WF. That's all I'm having because I'm picking my brother up from the airport shortly after dinner and he might want to stop in Newark to dine at a Portuguese restaurant.

If not, I've been cooking for days in preparation for his visit, so there's plenty to choose from if we get home and want to have something here.

I’m doing super simple tonight: Stouffer’s meatloaf and Bob Evans mashed potatoes 😊 We’ve had a busy, stressful week and no one feels like cooking. And this way there’s meatloaf sandwiches tomorrow!

2. Linguine w/white clam sauce and shrimp

Tossed salad and wine

Never made it before with shrimp but I had a pound in the freezer that is shelled and deveined so
I put that in with the clams.

3 to 4 cloves of garlic diced
olive oil
butter
Italian spices

fry them cook in the iron skillet till just before they garlic turns golden
add the juice from 4 to 5 cans of clams

and cut up some parsley and add to the mix and let simmer for about 15 minutes under low heat

add the clam and the shrimps

cook under very low heat for about 1 hour

serve over pasta

I used to add some Pecorino Romano on top but I don't have any)

serve with dinner rolls or Italian bread to soak up the juices

Beef, barley and some veggies. TJ put it together from leftover steak and assorted veggies plus some very ripe tomatoes. Some leftover salad as well.

FLFC is presently napping on the couch as he does for about 20 hours a day. He'll certainly discuss his culinary desires when he's up. You can never know in advance what he'll eat. Unfortunately there was no watermelon in the store today and this has been his favorite alternative food this summer. We'll have to try apples or blueberries.

regular season, so I'm going to watch the Giants and Padres tonight and have a couple of really good hot dogs with grey poupon mustard and sweet relish.

Farmers market tomatoes -- the real thing.

Cornmeal, a little Old Bay seasoning, cast iron skillet.

Some chicken, too. And the last watermelon and sweet corn from the farmers.

I’m having drinks and dinner with a neighbor in the Catskills. We’ll probably order a pie with sausage and mushrooms, (her favorites). I’ll get a mixed salad too. I already picked up some Chianti.

I thawed a bag of frozen shrimp and marinated it in garlic and pepper. Grilled on skewers.

Mediterranean Pasta

... with tomatoes, artichoke, garlic, and lemon. A fast, healthy pasta recipe that’s easy to make ...
Ingredients
1 tablespoon kosher salt (plus 1 teaspoon, divided)
6 ounces whole wheat angel hair pasta (whole wheat spaghetti, or similar whole wheat noodles
4 cloves garlic
2 cups grape tomatoes (or cherry tomatoes)
1 can quartered artichoke hearts ((14 ounces))

Add sweet red pepper slices, and Kalamata olives, and SCALLOPS!

was GREAT, they got the 'taste.'
