Got vaxx #3 yesterday, aches and aches today. So I worked through it painting outdoors and patching the shed roof. Very very tired, but it's not as painful as vaxx #2.

We took thick cut boneless pork chops and stuffed them with homemade apple sauce then baked them with an aluminum tent over the pan. The juices provided the base for a nice gravy.

We accompanied the pork with steamed Brussel sprout and stuffing. York peppermint patties made up our dessert.

Today, Monday, is very rainy and cool in the Catskills and I think we're going to need comfort food for dinner. Hmm.
