I never thought I liked curry dishes, but decided to try this recipe
. and I LOVE it. I made it exactly as written and it looks just like the picture.
Plus its so easy!

1 yellow onion
2 cloves garlic
1 tsp grated fresh ginger
1 Tbsp olive oil
1 Tbsp curry powder
1 15oz. can pumpkin purée
1 cup dry red lentils
6 cups vegetable broth
1/2 tsp salt
INSTRUCTIONS
Dice the onion, mince the garlic, and grate the ginger. Add the onion, garlic, and ginger to a large pot with the olive oil and sauté over medium heat until the onions are soft (about 5 minutes).
Add the curry powder and continue to sauté for about a minute more.
Next, add the pumpkin purée, lentils, and vegetable broth. Stir to combine.
Place a lid on the pot and bring the soup up to a boil over medium-high heat. Once boiling, turn the heat down to medium-low. Simmer the soup, stirring occasionally, for 20 minutes.
Finally, taste the soup and add salt to taste (about ½ tsp). Serve hot with bread for dipping.

(21,839 posts)Now that it is fall, I make soup so I can heat something up fast when I come home. It's a great way to get your share of vegetables too. This weekend I will make soup with yellow squash.

yum. I usually prefer homemade but Panera has an awesome squash soup.

(4,999 posts)Saute the onions in oil on *med hi* heat until edges are starting to blacken. Turn the heat back to med and splash a little water in the pan to cool it down, add the garlic and ginger and cook a couple of minutes.
Do everything else the same.
I never got Indian food right until I learned you really have to cook the onions until you see the edges starting to blacken.
And I'll bet fresh made curry would also take it up a notch.
Just had red lentils with onions and cabbage last night!
Im such a newbie to Indian cuisine!
