What's for Dinner, Fri., Oct. 15, 2021

Zucchini and eggplant flatbread.

I have a fresh zucchini from the garden. The zucchini is tossed with arugula and drizzled with olive oil, lemon, salt, and Parmesan cheese, then put over the roasted eggplant, which is on top of the flatbread.

I might make a double portion and use the extra in a wrap for tomorrow.

In addition, tomato vegetable soup, which is topped with Parmesan cheese and also has tortellini in it.

Dessert: poached pear with melted dark chocolate.

chicken breast instead of turkey.

Iceberg, carrot, grape tomato, celery, onion, ham, chicken, sharp cheddar, hard-boiled egg. dressed w/ homemade Italian dressing.

4. We lucked out tonight

Our friends from outside Utrecht invited us out to dinner. I had to be here anyway, and since we are all good friendsw and get to see each other infrequently at best, we decided to have dinner in town. The center of Utrecht is an old (1000 years or esso) canal. The street level used to be the merchants’ houses’ entrances. The canal level below was the delivery network.” Now the old series of passages and tunnels has been turned into cafés snd restaurants.

To start, I had what they called a Samosa. Like a hard won ton with Indian spiced purée inside, and with grilled eggplant sliced in a bed of a sort of a thickened gazpacho. The main course was a a Dover sole. Just grilled with lemon. Simple but good, and in the 1000 year old tunnels now redone as restaurant, it worked.

The Landlady(!) wanted to fry them so that’s on her. I’m making an iceberg lettuce salad with Danish blue cheese, cucumbers, red onion and carrot slivers. We’re also having roasted mini potatoes. Apple slices with dark chocolate for dessert.
