What's for Dinner, Sun., Oct. 17, 2021

Miso roasted root vegetables: carrots, beets, and onion. Has a glaze of miso, mirin, maple syrup and cinnamon.

I'll probably put a few sausages in the oven to roast, too.

Dessert: decaf chicory coffee and blackberries over vanilla pudding.

Yellow squash, scallions, garlic too! Don't know about dessert. Tired of carbs.

Baked with seasoning and butter
Baked sweet potato, a leftover

I'm not sure if I'll have more, this is one of those bachelor nights. If I'm motivated a bit of spinach salad will follow.

FLFC told me in no uncertain terms that salmon is poison by jerking his head away rapidly. He is having some leftover boneless country style pork rib. They were very fatty. That is no issue for him.

(Honestly, don't know how I even got dinner made--I'm wiped out. I went to bed at 1:00 am, and Al woke me at 2:00 to tell me Cookie had passed. I never made it back to bed.)

4. I got a new crockpot

Small sized, I put a large bone in skin on chicken breast in, added onions & a commercially made hot mango chutney, 2 hours later it was at 140 degrees. Apparently with this pot, low heat is the same as blowtorch hot.
I made madras spiced rice as a side, decafe tea.


I'll do this again, but I'll set a timer to check doneness sooner.

Had to make it with just regular basil, but it was still good. To go with, I quick-pickled some radish and cucumber slices with salt, sugar, rice vinegar and water.

Shrimp parmigiana served on rigatoni with a spicy tomato sauce and mozzarella cheese melted on top. Our salad was based on the last of our red leaf lettuce from the garden supplemented with cherry tomatoes, slices of green olives, slices of celery and red onion. Strawberry ice cream finished the meal.
