What's for Dinner, Wed., Oct. 27, 2021

It's a cool, overcast day here in NJ, so I'm doing a variation on my creamy mushroom-wild rice soup. I am making small meatballs with grated carrots, chopped spinach, and dill to add to the soup tonight.

I'll also have a mesclun salad with blueberries, walnuts, and goat cheese.

Dessert will be a caramel apple, dipped in chocolate and with chopped peanuts in the chocolate.

Mug of apple cider later, during the political shows.

It’s sort of a stew made with shredded beef, onions, red peppers, green olives, pimentos, capers, carrots, celery, chicken broth and white wine. It also has a slew of spices and stuff including cumin, paprika, cloves, allspice, Kosher salt, black pepper, oregano and garlic. We’re using a flank steak and it’s been cooking in the crock pot for several hours already. Well serve the dish with white rice and black beans.

The name comes from the Spanish term for “old clothes” because the dish looks like a pile of colorful rags. It tastes a lot better, though! Ropa Viejo is so popular that it’s one of Cuba’s designated national dishes.

with mashed potatoes and green beans.

TJ prepared it all, as I was doing medical stuff all afternoon. I don't even see dishes to wash.

FLFC was dozing on the couch, which is his forte lately, when I snuck up and held a piece of pork chop in nose range. He woke suddenly and slurped that piece. I disappeared. He got off the couch and discovered a plate with chopped chops. When he really gets into his food his whole body gets involved. He was eating with such gusto tonight he fell over.

What a compliment to the chef. It was so good I fell down.

I must say, in all my years of cooking, I've never had anyone fall over in pleasure!

FLFC is such a character.
