Experimenting in the kitchen
My daughter has been talking about peanut butter powder. She dips tofu chunks in it, sprays a pan with oil, and browns them. And she uses it for smoothies, less fat and calories than peanut butter. Big Lots had 20% off storewide over the weekend, and had some of the powder in stock. I got a jar, figured I could share it with my daughter.
Today, I tried making peanut butter chicken with it. It turned out good, not crispy all over the the local Chinese version, but it had a good flavor. I really like p.b. chicken and make my own pretty often, ususally saute everything and add a peanut-soy-hot sauce mix a couple minutes before it is completely cooked. If I'm really lucky, I'll have some green onions to toss in.
I made some curried vegetables the other day, so had some of those with the p.b. chicken. Everything is tasty.
I have 2 bunches of fresh asparagus that I'm sauteing for later. The farm right beside my neighborhoos is selling fresh asparagus for another week or 2, and I am getting my fill, for sure. When I was a kid, my Mom would cook it in water, but I like it so much better sauteed or roasted.
