What's for Dinner, Tues., May 18, 2022

Pasta, casarecce cut. Parmesan roasted garlic sauce (creamy). I chopped crispy bacon into bits and added chopped green onion to mix in.

I roasted a pan of poblanos and filled them wih Monterey Jack or provolone cheese. Serving this with the pasta.

I might have enough arugula for a little salad.

Mango pineapple kombucha.

Lemon cake with blueberries for dessert. Vanilla nut decaf.

2. Roasted Vegetables with Shrimp

This was an easy recipe… just shake the vegetables in Olive oil and Parmesan cheese.
Cook for 15 Min.

Add shrimp seasoned with Olive oil and and oregano

Pull sheet pan out and add the shrimp.

Use zest if a lemon and juice cook 8 minutes more.

and we'd usually have treated ourselves to steak tonight, but I also had to go for labs this morning and it was getting late and hot, so we didn't feel up to making the last stop to get them while we had frozen groceries in the small cooler. So, I'm baking some frozen breaded butterfly shrimp, hush puppies and fries.

It's so hot, I hate to turn on the oven, but it's a quick and easy dinner.

Speaking of pineapple and mango, before picking up groceries, we picked up lunch at Wendy's for lunch after my fasting labs (I was starving and it was nearby) and have been slowly sipping on a pineapple mango lemonade I got there (too big to drink the whole thing at once.)

I'm not hungry, so just making enough for the husband, which means I can just use the toaster oven. Yaaa!

5. That rotisserie chicken we bought

got all torn apart Monday and I made chicken fried rice that night. And started bone broth.

Tonight I'm making southern style chicken and dumplings out of what I have on hand---chicken, some frozen peas, carrots, onions, bone broth, chopped up biscuits from a can, herbs---in the Instant Pot for 5 minutes. Lazy me!

with olive oil and garlic…add pesto, leftover sliced beef tenderloin, burrata cheese and grilled asparagus. Drizzle with balsamic glaze.

I made a chocolate bundt cake, but I'm too full to even think about having a slice.
