with fried chicken, potato salad, fried okra and raspberry cobler. And somewhere in there I'm going to try to can some carrots -- maybe.

Boiled potatoes, cabbage and green beans. Some cut up cucumbers and cherry tomato's on the side and for desert am making a loaf of blueberry bread.

. Came home to a power outage and EVERYTHING in the fridge/freezer was spoiled. So the first hour was spent throwing everything out and I cleaned it the next day. Fortunately, there wasn't too much in the fridge, or freezer, but every single condiment jar/bottle was emptied and rinsed out for recycling.

Tonight we are having Fried Eggplant Slices, Grape Leaves and Couscous with mandarin oranges.

My fridge needs to be cleaned out. I don't hope for a power outage though! It's just one of those chores I hate.

The refrigerators were one of the biggest problem the city had in clean up.

but the power outage caused the breaker that governs the kitchen to trip . So nothing came on there when the power was restored. Our neighbor said it was only out for a couple of hours.

We had a French phrase book and I bought a French/English Dictionary, so that helped. Many of the younger people we talked with spoke English. Since neither of us know any French, it was frustrating sometimes.

Here is a website if you'd like to see where we went. We also went to northern New Brunswick and camped at a provincial park. We loved it there, too. Definitely would like to go back one day.

Green salad and crusty bread. All served chilled and utterly delicious. I found some gorgeous eggplant at the farmer's market and everyone begs for this classic recipe for sweet/sour eggplant with onion, celery, tomatoes, capers, and pine nuts. Eating light tonight but dining very well.

Zucchinis, tomatoes, potatoes, fennel, probably some sage.

Might do some type of topping for a flatbread, probably just garlic/olive oil/herbs.

Because the weather is going to be very hot on the weekend, I did some pantry work today. Simmered a big corned beef to have for sandwiches on the weekend. Tonight it will be with home fried potatoes cooked with fresh rosemary and red onion and cracked pepper. On the side, a Russian-style cucumber-radish-sourcream-fresh dill salad and some rye rolls.

I like to cook ahead for a hot weekend, and will be doing that tomorrow.

i froze a center cut honey mustard pork loin roast then threw it in the c'pot with low fat italian dressing

served with peas and yellow rice and a brown mustard/horseradish sauce

fast and tasty! i'm working 9 hour shifts til Labor day so lots of crock pot meals this summer

17. another grazing night

a tomato, corn bread and some graham crackers and milk so far. i cleared out a lot in preparation for the move and haven't had a chance to get to the store yet, so it's just whatever i can find or feel like making.

i'd intended to make the corn bread to go with the chili, but just didn't feel like it until today. i used creamed corn for most of the liquid and added fresh jalapenos and red peppers. tragedy hit when i realized we had only a tiny bit of butter left, but it was moist enough to eat without.

the tomato was the last from my last trip to the farmer's market, a yellow one that was just incredible.
