We're having stuffed peppers, more corn on the cob and some kind of salad....maybe just sliced beets, cuke spears, boiled potato slices and homemade aioli .

roasted red peppers salad with a creamy mustard dressing and some of our cheese with bread on the side.

I am down to mostly canned foods, but have everything I need for this.

Chorizo, shredded cabbage, green salsa, cilantro & lime, rolled tight in little corn tortillas and fried real quick in oil. They used a mesh fry tool to lay them in the oil and pull when done.

Great appetizer or a tasty side bite for a bigger meal.

I cut up big, fresh peaches and nectarines. Blanched white onion and then cut up the pork-chicken sausages. Basted them all with apricot preserves into which I'd mixed chopped up chipotle. Broiled 'em, as it was too dark to go out and start the grill. They were yummy-delish.

I served a side of bowtie pasta mixed with arugula pesto.
