Related: About this forumI had a bumper crop of bell peppers last year and now have
a couple of jars of roasted peppers in olive oil. Coming up on a new growing season and really should burn through the on-hand inventory.
Any suggestions?
Oh, also doing low carb Atkins style diet so pasta is out (lost 22 lbs, 12 to go).

(14,725 posts)Stuffed peppers with whatever meat combo you are allowed. Pepper and eggplant and, if allowed, stewed tomato and Italian spices would be great together.

(32,079 posts)Still a great combination, even without the bread. Or, get some low carb wraps or tortillas. Plenty of them out there. Roasted peppers also go GREAT with Italian sausages, and there are some good, lower fat chicken Italian sausages on the market, such as those by Al Fresco. Johnsonville's are decent, too.
BTW, are you familiar with Shiritaki noodles? They're low carb, and are an okay substitute for pasta. They are made from tofu.

(985 posts)But that is usually made with hotter peppers, like banana peppers. It's great on sandwiches and as a veggie dip. And great on every sausage imaginable. It lasts indefinitely.
Here's a recipe:
36 big banana peppers (2 pecks)
3 lbs brown sugar
1qt yellow mustard
1 qt apple cider vinegar
1 tsp salt
1 1/4 c flour
Seed and chop peppers. Mix everything together. Boil for 5 minutes stirring constantly.
Ladle into hot, sterilized jars. Cap with hot lid and of course the ring and process in hot water bath for 10 minutes.

I'd blot them dry and fill them with ground meat and cheese (of your liking), dip them in a quick egg wash and fry them up.
You can also just smear a little cream cheese in them and wrap them in ham....Yum
You can also make a Romesco sauce for chicken or fish and there is always soup with a nice piece of cheese on top.
Here's the Romesco sauce recipe I use. You can leave out the bread and reduce the nuts. I use almonds

I have even left out the tomato...It's a very forgiving recipe..

I added it. This sauce is also great to poach eggs in or on top of eggs.
