What's for Dinner ~ Wednesday Jan 23rd

Killed ANOTHER computer this week and am popping in to post this on Bill's box. I am going to try and Frankenstein one together from the corpses of those I have killed that are still sitting in the storage closet. Wish me luck.

We have been on a Mexican food kick lately, so when I feel up to eating it's been home-made pico de gallo and some form of burritos.

and orange chicken, but it's gloomy and chilly, so I am leaning towards the sloppy joes.

Your meal sounds great!

I'm making this today along with Moroccan bread and steamed couscous. DH isn't coming home until after midnight so I have plenty of time to slow cook this (it's actually already in the oven, been slow cooking a few hours by this point.)

I've been on a Moroccan food kick, trying to learn how to make it. I actually ordered my first tagine, an unglazed one, that I hope will arrive in the next week or two. In the meantime I am making this recipe in a dutch oven with a circle of parchment paper pressed down on the stew.

I received a nice cookbook on Moroccan recipes for Xmas and am exploring.

Well it's actually not a casserole...I just dump it in the pressure cooker with lots of garlic and a can of tomatoes. I'll eat it over Shiritaki noodles and SO will probably just make a sandwich out of it.

Had to use canned chiles, but it's still pretty good.

I could eat Mexican food every day. I am convinced I was a Mexican in a former life. Just made a big batch of venison chile for 50 and a big batch of butternut-apple soup for 50 and have my assembly line of pies ready to bake off tomorrow. I'll make the fillings tomorrow, but the crusts are all formed and frozen for the occasion.

Tonight, we are having baked potatoes, salmon, and steamed broccoli and a ciabatta roll on the side. Back to the kitchen!

15. vegetarian sandwiches on pumpernickel

Eggplant sammiches with roasted peppers, sundried tomatoes, and a big slice of mozzarella on fresh pumpernickel. I flavor the mayo with chipotle. It's hot, but good!

But earlier in the day I made a pot of soup because it was so cold.

LiberalLoner, I looked at tagines. Your cooking adventure sounds like fun.

Baked potatoes and salad on the side. It's been a long time since we've had steaks so we splurged. The steaks were disappointing. I 'd rather have a cheeseburger.
